- For the Meatloaf:
- 2 lbs ground beef (85% lean)
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 2 eggs
- ½ cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- For the Filling:
- 1 tablespoon olive oil
- 1 medium yellow onion (diced)
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 2 cloves garlic (minced)
- 6 slices provolone cheese
- For Topping:
- 3 additional slices of provolone cheese
- Chopped fresh parsley (optional, for garnish)
Instructions
- Prepare the Filling:
- Heat olive oil in a skillet over medium heat.
- Add the diced onions and bell peppers. Sauté for 5-7 minutes, until softened and slightly caramelized.
- Add the minced garlic and cook for another minute. Remove from heat and let the mixture cool.
- Mix the Meatloaf:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper (or spray a loaf pan with non-stick spray).
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined—do not overmix.
- Assemble the Meatloaf:
- Place half of the meatloaf mixture onto the prepared baking sheet or loaf pan and flatten slightly to create a base.
- Layer 3 slices of provolone cheese on top, followed by the cooled onion and pepper mixture.
- Add another 3 slices of provolone cheese on top of the veggies.
- Place the remaining meatloaf mixture over the top, shaping it into a loaf and sealing the edges to keep the filling inside.
- Bake:
- Bake the meatloaf in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
- About 5 minutes before it’s done, place the remaining slices of provolone on top of the meatloaf and let them melt.
- Rest and Serve:
- Allow the meatloaf to rest for 10 minutes before slicing to ensure it stays juicy.
- Garnish with fresh parsley, if desired, and serve warm.
