Fluffy Lemon Ricotta Pancakes

  • Total Time: 30 minutes
  • Yield: 4 1x

Description

These Fluffy Lemon Ricotta Pancakes are a citrusy, light, and creamy breakfast delight! Perfect for weekend brunch or any morning that calls for something extra special, these pancakes are easy to make and packed with protein-rich ricotta and zesty lemon flavor.

Ingredients

Scale
  • 1 cup ricotta cheese (whole or part-skim)
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs (separated)
  • ¾ cup milk (whole or 2%)
  • Zest of 1 large lemon
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • Butter or oil (for greasing the pan)

Instructions

  1. Combine Dry Ingredients: In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Mix Wet Ingredients: In a large bowl, whisk the ricotta, milk, egg yolks, lemon zest, lemon juice, and vanilla until smooth.
  3. Combine Wet and Dry: Gradually stir the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  4. Whip Egg Whites: In a separate clean bowl, beat the egg whites until soft peaks form. Gently fold the whipped egg whites into the batter to create a light and airy texture.
  5. Cook Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Scoop ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown.
  6. Serve: Enjoy with your favorite toppings, such as syrup, fresh berries, or whipped cream.

Notes

  • For the fluffiest pancakes, don’t skip whipping and folding in the egg whites!
  • Fresh lemon juice and zest give the best flavor—avoid bottled lemon juice.
  • You can store leftovers in the fridge for up to 3 days or freeze them for up to 2 months. Reheat in a toaster oven or microwave for best results.
