- 2 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- For the Cinnamon-Sugar Topping:
- 3 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the pumpkin puree, egg, and vanilla extract, and whisk until well combined.
- In a medium bowl, whisk together the flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, and cloves.
- Gradually fold the dry ingredients into the wet ingredients using a spatula, mixing until just combined. Avoid overmixing.
- Spread the batter evenly into the prepared pan.
- In a small bowl, mix the granulated sugar and cinnamon for the topping. Sprinkle this mixture generously over the top of the batter.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan before lifting them out using the parchment overhang. Slice into squares and serve.
