  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • For the Cinnamon-Sugar Topping:
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the pumpkin puree, egg, and vanilla extract, and whisk until well combined.
  3. In a medium bowl, whisk together the flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually fold the dry ingredients into the wet ingredients using a spatula, mixing until just combined. Avoid overmixing.
  5. Spread the batter evenly into the prepared pan.
  6. In a small bowl, mix the granulated sugar and cinnamon for the topping. Sprinkle this mixture generously over the top of the batter.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool completely in the pan before lifting them out using the parchment overhang. Slice into squares and serve.
