Instructions
- Prepare the crust: Preheat the oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.
- Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add granulated sugar and vanilla, and mix until well combined. Add eggs, one at a time, mixing until just combined. Stir in ground cinnamon.
- Create the cinnamon swirl: In a small bowl, mix brown sugar and ground cinnamon. Spoon half of the cheesecake batter into the crust. Sprinkle half of the cinnamon mixture over the batter. Add the remaining cheesecake batter and top with the remaining cinnamon mixture. Use a knife to swirl the cinnamon into the batter.
- Bake the cheesecake: Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly puffed. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.
- Prepare the honey glaze: In a small bowl, whisk together powdered sugar, honey, and enough milk to reach your desired consistency.
- Chill and serve: Once cooled, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, drizzle the honey glaze on top.
