  • 2 large chicken breasts (halved into 4 thin fillets)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil or oregano
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves (optional, for garnish)

Instructions

 

  1. Preheat oven to 375°F (190°C).
  2. Slice chicken breasts horizontally to create four thin fillets. Pound to ½-inch thickness.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, garlic powder, paprika, salt, and pepper.
  4. Dredge chicken in flour, dip in eggs, and coat with breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat. Fry chicken for 3-4 minutes per side until golden. Set aside.
  6. In a saucepan, sauté garlic in olive oil until fragrant. Add marinara sauce and dried basil or oregano. Simmer for 5 minutes.
  7. In a baking dish, spread a thin layer of marinara sauce. Place fried chicken on top, spoon additional sauce over each piece, and sprinkle mozzarella and Parmesan cheese.
  8. Bake for 15-20 minutes until cheese is melted and bubbly. Garnish with fresh basil and serve immediately.
