  • 2 cups cooked and shredded chicken (breast or thighs)
  • 1 pound potato gnocchi (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups baby spinach, packed
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Parmesan cheese (optional, for serving)

Instructions

 

  1. Heat olive oil and butter in a large pot over medium heat. Add onion, garlic, carrots, and celery, and sauté for about 5 minutes until softened and fragrant.
  2. Pour in the chicken broth, stir in thyme, salt, and black pepper, and bring to a simmer. Let cook for 5 minutes.
  3. Stir in the cooked chicken and gnocchi. Simmer for 5-7 minutes, or until the gnocchi is tender and floats to the top.
  4. Reduce heat to medium-low and gently stir in heavy cream and baby spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
  5. Taste and adjust seasoning as needed. Serve hot with Parmesan cheese if desired.

  • Use store-bought rotisserie chicken for a quicker option.
  • For a gluten-free version, substitute gluten-free gnocchi and ensure your chicken broth is gluten-free.
