This 30-minute homemade chicken gnocchi soup is creamy, comforting, and packed with tender chicken, soft gnocchi, fresh veggies, and a velvety herb-infused broth. Perfect for busy weeknights or cozy family dinners, it’s quick to prepare and utterly delicious!

- 2 cups cooked and shredded chicken (breast or thighs)
- 1 pound potato gnocchi (store-bought or homemade)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 2 medium carrots, peeled and sliced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups baby spinach, packed
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Parmesan cheese (optional, for serving)
Instructions
- Heat olive oil and butter in a large pot over medium heat. Add onion, garlic, carrots, and celery, and sauté for about 5 minutes until softened and fragrant.
- Pour in the chicken broth, stir in thyme, salt, and black pepper, and bring to a simmer. Let cook for 5 minutes.
- Stir in the cooked chicken and gnocchi. Simmer for 5-7 minutes, or until the gnocchi is tender and floats to the top.
- Reduce heat to medium-low and gently stir in heavy cream and baby spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
- Taste and adjust seasoning as needed. Serve hot with Parmesan cheese if desired.
Notes
- Use store-bought rotisserie chicken for a quicker option.
- For a gluten-free version, substitute gluten-free gnocchi and ensure your chicken broth is gluten-free.
- To freeze, leave out the gnocchi and cream and add them fresh when reheating.
- Add a dash of red pepper flakes for a slight kick, or garnish with fresh parsley for extra freshness.
